How about the versatile "Joy of Cooking"?
I bought "Not Your Mother's Slow Cooker Cookbook" for someone and he loves it. If you've got a crockpot, my vote goes for this cookbook. It'd leave you a lot of time not doing intense cooking. :)

Dawn, I don't have a slow cooker, although I am getting one from my parents for Christmas and I am nearly boiling over with excitement. I love making soups, and now I can actually fit them into my schedule.
Lexy, I have been thinking the Joy of Cooking would be the next cookbook, and I'm guessing it will be now.
